Проведен скрининг восьми штаммов-микроорганизмов на питательных средах, приготовленных на основе творожной, подсырной и казеиновой молочной сыворотки. Отобран штамм-продуцент микробного белка Debaryomyces hansenii var hansenii Y-4 (D.h.v.), который проявил наибольшую активность. Установлены состав и количество минеральных добавок для максимального накопления биомассы. Определено оптимальное количество посевного материала, изучено влияние физико-химических факторов на рост продуцента. Показано, что выбранный продуцент (D.h.v.) способен перерабатывать творожную, подсырную и казеиновую молочную сыворотки с представляющим практический интерес накоплением биомассы в пределах 30–35 г/дм3; при этом содержание лактозы уменьшается до концентрации менее 0,5%.</p></abstract><trans-abstract xml:lang="en"><p>Milk whey processing based on biosynthesis of yeast microorganisms was studied. The screening of eight strains-microorganisms in nutrient media based on curd, cheese and casein milk wheys was presented. The strain-producer of the microbial protein Debaryomyces h ansenii var hansenii Y-4 (D.h.v.) was selected which showed the greatest activity. The composition and amount of micro- elements necessary to enrich the culture medium for maximal accumulation of biomass was established. The optimal amount of seed material was determined; the influence of various factors of biosynthesis was studied.
